- Spicy Vegan Meatballs
Ingredients: 400 gm pea protein mass, Finely chopped onion (1-2), Chopped garlic (2-3 Cloves), Chopped Coriander (10 gm), Chopped green chilli (3-4), Red chilli powder (1 teaspoon), Salt, Pepper, Cumin and turmeric powder to taste, vegetable oil, sweet paprika (10 gm).
Preparation: Take a mixing bowl and put pea protein mass, chopped onion, garlic, chilli, and coriander in it. Mix them well with a spoon. Now add salt, pepper, cumin powder and red chilly powder. Mix the spices with the ingredients. Now knead the mixture with your hands for better results. When the mixture is ready, start making even-sized balls with your hands. You can oil your hand before so that the mixture doesn’t stick. Now take a pan and heat it in the oven. Brush a little bit of vegetable oil. Put the previously made balls in the pan and fry them on low heat. Make sure to fry the surface. Once they start to turn brown set them aside.
Now take another mixing bowl and put the tomato paste, sweet paprika and a little vegetable oil. Add salt, turmeric and red chilli powder to taste. Whisk the mixture until it turns smooth. Now pour the mixture over the meatballs and bring the whole thing to boil. Lower the heat and cook until the sauce gets thick and there’s no raw smell. Serve hot with rice.
- Creamy Mashed Potatoes
Ingredients: Medium-sized potatoes (3-4), Soy milk (50 ml), Salt, Pepper, and Chilli flakes to taste.
Preparation: First clean the potatoes properly with water. Cut them evenly into little chunks. Now take a large pot and pour some cooking water. Add the potatoes and the spices and bring them to a boil. Lower the heat and let the potatoes simmer for 20 minutes. Once the potatoes are soft take them out. Keep the cooking water aside for later use. Break the potatoes and separate the skin. Using a fork mash the potatoes. Now add the soy milk, salt, pepper and chilly flakes. Once all the ingredients and spices are mixed properly add a little bit of cooking water. Mush until the potato is soft and creamy and serve them hot with rice.
